Bacterial exopolysaccharides as emerging bioactive macromolecules: from fundamentals to applications

Navneet Kaur et al.

Summary: Microbial exopolysaccharides (EPS) are extracellular carbohydrate polymers that form capsules or slimy coatings around cells, and they play important roles in attachment, environmental adaptation, stress tolerance, and biofilm formation. EPS produced by gut commensals have diverse bio-activities and find commercial applications in pharmaceutical and food industries. Genetic and metabolic engineering strategies are used to increase EPS production. This review provides a comprehensive overview of bacterial EPS, including their classification, source, biosynthetic pathways, and functions in the microbial community, as well as their bioactivities, particularly in the gut. The review highlights the importance of microbial bioactive exopolysaccharides.

Nanocellulose-based ammonia sensitive smart colorimetric hydrogels integrated with anthocyanins to monitor pork freshness

Hamidreza Pirayesh et al.

Summary: This study aims to develop green sustainable TEMPO-oxidized cellulose nanofibril (TOCNF)-based smart hydrogels triggered with different crosslinkers and anthocyanins (ACNs) from different sources for monitoring pork freshness. The cheap and environmentally friendly CFIs developed in this study could detect the pork warning stage and the medium fresh stages both qualitatively and quantitatively. The non-linear response of the CFIs to ammonia could indicate their potential to differentiate TVB-N mixtures contributing to the meat spoilage process.

Thashree Marimuthu et al.

Summary: This study compares the effectiveness of an ionic liquid (IL) agent, [HMIM]Cl, as a plasticizer in comparison to current industry standards. The results show that [HMIM]Cl is a more effective plasticizer than the tested standards, even at concentrations as low as 20-30% w/w. Additionally, the combination of [HMIM]Cl with a standard plasticizer demonstrates remarkable plasticizing capability and long-term stability.

Summary: In this study, a simple strategy was developed to prevent the agglomeration of zeolitic imidazolate framework (ZIF-8) nanoparticles in epoxy resin (EP). Branched polyethylenimine grafted ZIF-8 in ionic liquid (BPEI-ZIF-8) nanofluid with good dispersion was successfully prepared. The addition of BPEI-ZIF-8/IL improved the flexural strength and impact strength of the EP composites.

Azo dyes in the food industry: Features, classification, toxicity, alternatives, and regulation

P. Barciela et al.

Summary: Azo dyes, such as Tartrazine, Sunset Yellow, and Carmoisine, are commonly added to foods for coloration purposes, but they do not provide any nutritional or health benefits. Synthetic azo dyes are favored by the food industry due to their availability, affordability, stability, and ability to provide intense color without unwanted flavors. Despite being tested by regulatory agencies, the safety of these dyes remains controversial, primarily due to potential adverse effects caused by the breakdown of the azo bond. This review examines the characteristics, classification, regulation, toxicity, and alternatives to the use of azo dyes in food.
