Green tea fermentation with Saccharomyces boulardii CNCM I-745 and Lactiplantibacillus plantarum 299V

Rui Wang et al.

Summary: This study found that co-fermentation of green tea infusion with probiotics significantly improved the survival rate of probiotic lactic acid bacteria and enhanced the generation of aroma compounds in tea. Co-culturing also increased the levels of certain aroma compounds while reducing the production of lactic acid. These findings suggest that fermenting tea with probiotics could be an innovative way to modulate tea flavor and develop a novel tea beverage with high counts of live probiotics.

Safety Evaluation of Yeasts With Probiotic Potential

Pilar Fernandez-Pacheco et al.

Summary: This study evaluated the safety aspects of 20 yeast strains isolated from food environments with probiotic potential. Differentiation of Saccharomyces cerevisiae strains showed distinct genetic profiles compared to Saccharomyces boulardii. The evaluated strains demonstrated varying enzymatic activities and resistance to antibiotics, but sensitivity to antifungal agents, with one strain excluded for high production of tyramine.

Assessment of exopolysaccharides, bacteriocins and in vitro and in vivo hypocholesterolemic potential of some Egyptian Lactobacillus spp.

Asmaa Negm El-Dein et al.

Summary: Lactobacilli probiotics have been shown to have low side effects and can reduce cholesterol levels. Studies have found that their production of bacteriocins and exopolysaccharides (EPSs) have potential functional applications in the food industry, including antioxidant and anticancer activities. The selected strains of Lactobacillus also exhibited antimicrobial activities and cholesterol-lowering effects in vivo.

Traceability of sweeteners in soy yogurt using linear discriminant analysis of physicochemical and sensory parameters

Md Rahmatuzzaman Rana et al.

Summary: The study aimed to develop soy yogurt with different sweeteners, investigating their effects on physicochemical properties and using LDA for sweetener prediction. Honey-containing soy yogurt had higher protein content and lower fat content, with varied ash content and TSS due to sweetener additions. LDA model accurately predicted sweeteners in soy yogurt samples, distinguishing artificial sweeteners with 100% accuracy.
