In this study, using BAHD acyltransferases as a model, the researchers compiled published activities and used orthologous groups to predict the utilization and origins of BAHD enzymes in plants. The results not only describe how BAHD enzymes contributed to the evolution of multiple chemical phenotypes in the plant world, but also propose an approach for improved functional annotation of plant enzyme families using biocuration.

Summary: By studying nine bitter-tasting accessions, including the 'high tomatine' Peruvian landraces, researchers found a deletion in the GORKY gene, which mediates the subcellular localization of alpha-tomatine during fruit ripening; GORKY exports alpha-tomatine and its derivatives from the vacuole to the cytosol, facilitating the conversion of the entire alpha-tomatine pool to non-bitter forms; these findings suggest that GORKY activity is a notable innovation in the process of tomato fruit domestication and breeding.
