Effects of Dietary Vitamin E, Vitamin C, Selenium and Their Combination on Carcass Characteristics, Oxidative Stability and Breast Meat Quality of Broiler Chickens Exposed to Cyclic Heat Stress

Manca Pecjak et al.

Summary: High ambient temperatures in the poultry meat industry cause heat stress and deteriorate meat quality. Vitamin and mineral supplementation, particularly vitamins E and C and selenium, have shown potential in mitigating the negative effects of heat stress on broiler performance and meat quality. However, the synergistic effects of these antioxidants on meat quality under heat stress have not been studied extensively. This study investigated the effects of dietary supplementation with vitamin E, vitamin C, and Se, either alone or in combination, on carcass characteristics, oxidative stability, and meat quality parameters in broilers exposed to cyclic heat stress.
