Cavitation behavior and mixing performance of antisolvent precipitation process in an ultrasonic micromixer

Zhikai Liu et al.

Summary: A facile and robust ultrasonic micromixer was developed for intensified antisolvent precipitation via ultrasonic cavitation. The gas supersaturation generated from solvent-antisolvent mixing was identified as a novel driving force for the formation of cavitation bubbles (CBs). These CBs translated across the microchannel, inducing intense transverse flow and enabling rapid mixing of solvent-antisolvent over a wide range of Reynolds number and flow rate ratio. The ultrasonic micromixer demonstrated its potential as a new tool for antisolvent precipitation by synthesizing size-controllable and monodisperse polymeric nanoparticles in a high-throughput and reproducible manner.

Controllable emulsification by dissolved gas in water: Formation and stability of surfactant-free oil nanodroplets

Zhanli Geng et al.

Summary: By studying the role of dissolved gases in surfactant-free emulsions, we found that increasing the dissolved gas in water leads to more concentrated and smaller oil nanodroplets, but with a decreased growth rate. Removing dissolved gas severely restricts the emulsification process. The growth pattern of nanodroplets in different gas-saturated water is similar, and the stability of nanodroplets is largely independent of dissolved gas in water.

Structure and stability characterization of pea protein isolate-xylan conjugate-stabilized nanoemulsions prepared using ultrasound homogenization

Dan Zhao et al.

Summary: This study investigated the preparation, structure, and environmental stability of PPI-X conjugate-stabilized nanoemulsions. The optimized conditions for preparing the nanoemulsions resulted in smaller droplet size, more uniform distribution, higher zeta-potential, and higher protein adsorption content compared to PPI-stabilized nanoemulsions. The conjugate-stabilized nanoemulsions also exhibited even particle distribution, dense network structure, and better stability against environmental stresses. These findings suggest that this type of nanoemulsions could be used as novel ingredients that can withstand harsh food processing conditions.

New insights into the mechanisms of ultrasonic emulsification in the oil?water system and the role of gas bubbles

W. H. Wu et al.

Summary: Gas bubbles play a crucial role in ultrasonic emulsification, affecting droplet size and distribution. The behavior of gas bubbles at the oil-water interface can promote the formation of droplets. Larger gas bubbles collapse and induce the generation of oil-in-water-in-oil and water-in-oil droplets, while smaller bubbles move towards the oil phase, leading to the production of water droplets in the oil phase. Increasing gas content results in more chaotic oscillation of bubbles and smaller, more stable emulsion droplets.
