Characterization of β-lactoglobulin adsorption on silica membrane pore surfaces and its impact on membrane emulsification processes

Patrick Giefer et al.

Summary: This study investigates the adsorption of beta-lactoglobulin on ceramic silica surfaces and its effects on premix membrane emulsification. The adsorption is driven by attractive electrostatic and hydrophobic interactions, with the treated silica surfaces resulting in a thicker layer of adsorbed beta-lactoglobulin. The adsorption offsets the effect of membrane hydrophilization, resulting in similar droplet size distribution for treated and untreated silica surfaces.

High-Resolution Numerical Simulation of Microfiltration of Oil-in-Water Emulsion Permeating through a Realistic Membrane Microporous Structure Generated by Focused Ion Beam Scanning Electron Microscopy Images

Mohammadreza Shirzadi et al.

Summary: Due to limitations in visualization techniques and low-resolution numerical models, the detailed behavior of oil droplets during microfiltration is not well understood. In this study, a high-resolution CFD model based on an in-house DNS code was used to analyze the dynamics of oil-in-water emulsions using a microfiltration membrane. The microporous structure of commercial ceramic membranes was obtained using image processing techniques, and numerical simulations of microfiltration were conducted to study the effects of different parameters on filtration performance. The results showed that droplet deformation and membrane structure significantly influenced filtration behavior and performance.

Investigation of local and temporal interfacial shear stress distribution during membrane emulsification

Tobias Wollborn et al.

Summary: This study utilized numerical simulations to investigate the interfacial stress distribution during droplet dispersion, revealing key mechanisms in the droplet dispersion process. Results showed higher shear stresses at the pore wall, while lower shear stresses at the liquid/liquid interface affected the droplet dispersion process.

Protein conformational changes at the oil/water-interface induced by premix membrane emulsification

Tobias Wollborn et al.

Summary: This study provides evidence that beta-lactoglobulin proteins undergo conformational changes during membrane emulsification processes. The shear stress applied during oil droplet fragmentation causes the protein to transition into a more stable, partially unfolded interfacial state.

Effects of Protein Content on Pickering-assisted Interfacial Enzyme Catalysis

Christoph Plikat et al.

Summary: This study provides insight into the effects of proteins on the fineness and stability of water-in-oil Pickering emulsions, as well as their catalytic performance. The presence of proteins resulted in decreased droplet sizes and stability against coalescence, with lipase concentration and location being crucial factors for optimizing catalytic performance.

Droplet breakup mechanisms in premix membrane emulsification and related microfluidic channels

Akmal Nazir et al.

Summary: Premix membrane emulsification (PME) is a pressure-driven process for droplet breakup through membrane pores, widely used for high-throughput production of controlled-sized emulsion droplets and microparticles. Various membrane types and pore structures influence the breakup mechanisms, with the paper providing a comprehensive review of different mechanisms and factors affecting droplet size.
