Peroxyacetic Acid Effectiveness against Salmonella on Raw Poultry Parts Is Not Affected by Organic Matter

Summary: The study evaluated the impact of organic matter on the efficacy of PAA solutions in reducing artificially inoculated Salmonella on chicken parts. Results showed that immersion of chicken thighs in PAA solutions could effectively reduce the presence of Salmonella, regardless of exposure time and OM concentration.

Application of Peroxyacetic Acid for Decontamination of Raw Poultry Products and Comparison to Other Commonly Used Chemical Antimicrobial Interventions: A Review

Summary: Comparing the effectiveness of PAA with other antimicrobials for decontaminating raw poultry carcasses and parts, PAA was found to be more effective than chlorine under most conditions studied, and its effectiveness was comparable to or higher than other compounds such as lactic acid and cetylpyridinium chloride depending on product and treatment conditions. Overall, primary literature studies support the popularity of PAA as an effective intervention against pathogenic bacteria during poultry processing.
