Cereulide and Emetic Bacillus cereus: Characterizations, Impacts and Public Precautions

Quantitative risk assessment of Bacillus cereus in wet rice noodles from raw material to marketing phase

Summary: We investigated the key risk factors for Bacillus cereus contamination in wet rice noodles production chain. Quantitative detection results showed that the final contamination level of B. cereus ranged from -3.55 to 4.34 log CFU/g in 95% of the samples. In addition to raw material, buffering temperature in the packaging delivery phase, transporting temperature, and time from factory to marketing phase were identified as key control factors.

Prevalence and antimicrobial-resistant characterization of Bacillus cereus isolated from ready-to-eat rice products in Eastern China
