New insights into the function of plant tannase with promiscuous acyltransferase activity

Yifan Chen et al.

Summary: In this study, it was discovered that tannase in tea plants is not only a hydrolase, but also an acyltransferase. Through enzyme and metabolic analysis, it was found that overexpression of tannase increased the total contents of simple galloyl glucoses and flavan-3-ol gallates in strawberry, tea, and Chinese bayberry.
