Modeling and application of sensory evaluation of blueberry wine based on principal component analysis

Yaqi Zhao et al.

Summary: In this study, a comprehensive quality evaluation method for blueberry wine was established by analyzing eleven physicochemical indexes. Principal component analysis showed that the first three principal components accounted for 85.73% of the total quality variability. The consistent ranking between the quality evaluation model and sensory evaluation test verified the reliability of the model. Additionally, ultrasonic treatment of blueberry wine resulted in higher scores, indicating changes in sensory quality with high sensitivity. This study provides a theoretical basis for the comprehensive quality evaluation of blueberry wines and guidance for consumer choices.

Chemical characterisation of bitumen type and ageing state based on FTIR spectroscopy and discriminant analysis integrated with variable selection methods

Lili Ma et al.

Summary: This study aims to classify different types of bitumen at various ageing states and identify the major chemical differences relevant to the classification. The Fourier transform infrared (FTIR) spectral data of eight bitumen types at five ageing states were analyzed using chemometric procedures. The models incorporating principal component analysis (PCA), linear discriminant analysis (LDA) and variable selection methods showed high accuracy in differentiating bitumen types and ageing states. The results highlighted the critical spectral regions and chemical changes associated with bitumen ageing, providing insights for characterizing bitumen properties.

Feasibility study on the use of ATR-FTIR spectroscopy as a tool for the estimation of wine polysaccharides

Berta Baca-Bocanegra et al.

Summary: Polysaccharides play a critical role in stabilizing and modifying the properties of wines. This study evaluates the use of Fourier transform infrared spectroscopy (FTIR) as a fast and non-destructive method for determining wine polysaccharides. The developed models show the potential of FTIR analysis for routine screening of different types of polysaccharides in wine samples.

An Integrative View of the Role of Lachancea thermotolerans in Wine Technology

Javier Vicente et al.

Summary: The interest in Lachancea thermotolerans, a yeast species with unusual characteristics, has notably increased in all ecological, evolutionary, and industrial aspects. One key characteristic of L. thermotolerans is its production of high quantities of lactic acid compared to other yeast species. Its evolution has been influenced by the environment and domestication, allowing several metabolic traits to arise. The molecular regulation of the fermentative process in L. thermotolerans reveals interesting routes that play a complementary or protective role against fermentative stresses.
