Summary: This study developed an untargeted proteomics and metabolomics approach using LC-HRMS to detect pork adulteration in tuna meat (TM). Metabolomics combined with PCA and PLS-DA could differentiate and detect pork in adulterated TM samples. Proteomics analysis successfully detected peptide markers of pork from myoglobin, carbonic anhydrase 3, and beta-haemoglobin. Both proteomics and metabolomics could detect up to 0.5% of pork concentration in TM.

This study used non-targeted metabolomics to reveal the changes in small molecular substances in duck meat during long-term storage. The results showed that as the storage time increased, the nitrogen-containing compounds, nucleotides, organic acids, and carbohydrates in duck meat increased. These small molecular substances can be used as biomarkers to detect deterioration in long-term stored duck meat. The main metabolic processes during the long-term storage of duck meat were protein catabolism, nucleotide catabolism, fat decomposition and oxidation, and carbohydrate decomposition.
