Fat replacement by green banana biomass: Impact on the technological, nutritional and dynamic sensory profiling of chicken mortadella

Correlation of the quality attributes of fufu flour and the sensory and instrumental texture profiles of the cooked dough produced from different cassava varieties

Summary: There is limited information on the relationship between the quality of fufu flour and the texture of cooked dough. This study found that flour's water absorption capacity was positively correlated with the moldability of cooked dough and negatively correlated with its hardness. The bulk density of flour was positively and significantly correlated with the hardness of cooked dough. Different cassava varieties exhibited different textural attributes in their cooked dough.

This research investigated the influence of emulsion droplet size and interaction between interface and meat proteins on the rheological properties of composite myofibrillar protein (MP) gel. The findings show that using nonmeat protein emulsions with nanodroplet size can significantly enhance the gel strength of MP gel.

Emulsions containing animal fat had lower emulsion stability but better thermal stability, rheological properties, and hardness compared to those containing oil. Emulsions with corn oil had the highest ratio of polyunsaturated fatty acids. Chicken fat emulsions may be the best fat source for emulsifying porcine protein due to its high thermal and emulsion stability, rheological properties, and fatty acid composition.
