Assessment of the Microbiological Quality and Safety of Unpasteurized Milk Cheese for Sale in England between 2019 and 2020

Summary: Cheese made with unpasteurized milk has been associated with outbreaks of illness. This study aimed to provide further data on the prevalence of Shiga toxin-producing Escherichia coli (STEC) in these products and assess the microbiological quality of raw milk cheeses available in England. The results showed that 82% of the cheese samples were considered to be of satisfactory microbiological quality, while 5% were borderline and 12% were unsatisfactory. A small percentage of samples were potentially injurious to health due to the presence of STEC, coagulase-positive staphylococci, and Listeria monocytogenes.

Rapid and multiplexed quantification of Salmonella, Escherichia coli O157: H7, and Shigella flexneri in ground beef using flow cytometry

Summary: A rapid and quantitative method for multiplexed detection of Salmonella, E. coli O157:H7, and S. flexneri in ground beef was developed using a sample pretreatment protocol and flow cytometry, enabling analysis within 1 hour without the need for cultural enrichment. The method demonstrated good recovery rates for the three pathogens and had a detection range of 103 to 108 cells/g, with detection limits of 3.1 x 103 cells/g for Salmonella, 2.1 x 103 cells/g for E. coli O157:H7, and 2.3 x 103 cells/g for S. flexneri in ground beef.

An ultrasensitive electrochemiluminescence biosensor for the detection of total bacterial count in environmental and biological samples based on a novel sulfur quantum dot luminophore

Summary: In this study, the electrochemiluminescence of sulfur quantum dots in a cathodic co-reactant was investigated. A highly sensitive ECL biosensor based on the selective quenching of ECL emission from the quantum dots by NADH was developed for the detection of total bacterial count. The sensor showed a linear response to NADH concentration and achieved a detection limit of 1 pM. It was successfully applied to detect TBC in water samples with a good recovery rate.

Summary: Vibrio parahaemolyticus is a human food-borne pathogen capable of entering the food chain and acquiring a viable but non-cultivable state undetectable by traditional methods. The DVC-FISH technique can detect microorganisms presenting VBNC forms in complex samples. Results showed a significant logarithmic decrease of V. parahaemolyticus at low temperatures, while rapid proliferation occurred at 22 degrees Celsius.
