Development of pH-responsive emulsions stabilized by whey protein fibrils

Summary: Globular proteins can form fibrillar structures under suitable pH and ionic strength conditions. Whey protein isolate fibrils (WPIFs) were investigated for their potential as stabilizers in creating pH-responsive emulsions. The properties of WPIF-emulsions were different from those of WPI-emulsions, with insights into the molecular origin of these effects obtained by measuring interfacial properties. The research demonstrates that the functional performance of food proteins can be extended by creating fibril structures.

Evaluation of the impact of stirring on the formation, structural changes and rheological properties of ovalbumin fibrils

Summary: Proteins have a tendency to self-assemble into amyloid fibrils with an ordered cross-beta structure. This study investigates the formation mechanism of ovalbumin (OVA) fibrils under specific conditions and shows that stirring treatment accelerates the formation rate. The building blocks of OVA fibrils are peptides with a molecular weight between 10 and 30 kDa, and both non-covalent and covalent interactions are involved in the formation process. OVA fibrils formed under stirring condition have higher viscosity and storage modulus and show no in vitro cytotoxicity.

Nanofibrils of food-grade proteins: Formation mechanism, delivery systems, and application evaluation

Summary: Food-grade protein nanofibrils have attracted significant research interest in the field of food science due to their high aspect ratio, appealing mechanical characteristics, and various adjustable functional groups. Converting these proteins into nanofibrils offers a promising strategy to enhance their functionality and application in areas such as gelling, emulsifying, and bioactive compound delivery. The size, structure, and morphology of nanofibrils are strongly influenced by the protein source and processing conditions, resulting in variations in functionality. Nanofibrils can be engineered into gels, microcapsules, emulsions, and complexes, each with unique properties and applications. Although the adsorption behavior at interfaces and the potential toxicity to humans require further investigation, nanofibril-based delivery systems hold great potential for enhancing the absorption and bioavailability of bioactive compounds.

Soy/whey protein isolates: interfacial properties and effects on the stability of oil-in-water emulsions

Characterization of iron reducibility of soy protein amyloid fibrils and their applications in iron fortification

Summary: Iron deficiency is a common nutritional disorder, and iron fortification using soy protein amyloid fibrils has been found to be effective. Soy glycinin (11S) showed the most significant effect in reducing Fe (III) to the more bioavailable Fe (II) state, while soy 13-conglycinin (7S) showed optimal results in generating iron nanoparticles on the fibrils in situ. The resulting fibril-iron nanoparticle hybrids were highly dispersible in various liquid foods without causing noticeable color changes.
