Possibilities to Use Germinated Lupine Flour as an Ingredient in Breadmaking to Improve the Final Product Quality

Summary: This study investigates the effects of adding germinated lupine flour (GLF) on dough rheology and bread characteristics. The results show that GLF addition decreases water absorption capacity, consistency, baking strength, extensibility, and tolerance for mixing, but increases gas production and falling number value. Moreover, GLF addition increases tan delta and reduces G' and G'' modules with increased dough temperature. Changes in starch and gluten distribution, as well as alterations in color parameters, were also observed. The sensory data indicates that GLF addition up to 15% is preferred. Overall, the study suggests a recommended maximum level of 15% GLF addition in white wheat bread dough.
