Activation mechanism of whey protein isolate mediated by free radicals generated in the ascorbic acid/hydrogen peroxide system

Summary: This study investigated the grafting mechanism of whey protein isolate (WPI) with (-)-Epigallocatechin-3-gallate (EGCG) through experimental techniques and molecular docking. The results showed that the ascorbic acid radical anion (Asc(center dot-)) generated in the Asc/H2O2 system removed hydrogen atoms from sensitive amino acids, leading to the formation of WPI-EGCG graft. Moreover, Asc(center dot-) changed the secondary structure of WPI and induced oxidative deamination of amino acids.
