Optimization of HS-SPME-GC-MS for the Determination of Volatile Flavor Compounds in Ningxiang Pork

Hu Gao et al.

Summary: This study aims to explore the suitable conditions for detecting volatile flavor compounds (VFCs) in Ningxiang pork using headspace solid-phase microextraction and gas chromatography-mass spectrometry (HS-SPME-GC-MS). The detection conditions, including columns, sample weight, heat treatment time, equilibrium conditions, and extraction conditions, have a significant impact on the VFCs of Ningxiang pork and need to be optimized. The optimal test conditions were determined as follows: weighing 5 g of meat samples, grinding for 30 s, heat treatment at 100 degrees C for 30 min, equilibration at 70 degrees C for 30 min, and extraction at 100 degrees C for 50 min. Additionally, the feasibility and representativeness of the test method were confirmed through principal component analysis and a comparison of three pork VFCs.

Effect of ageing time on the volatile compounds from cooked horse meat

Lorea R. Beldarrain et al.

Summary: The study analyzed volatile compounds in cooked and aged Hispano-Bret 'on horse meat, identifying 77 compounds where aldehydes were predominant. Lipid degradation was the main source of identified compounds, with minimal contribution from Maillard products. Aldehydes were found to be the major contributors to the aroma of cooked horse meat. Aging affected 15 volatile compounds, with hexadecanal and 2-and 3-methylbutanal showing significant increases, potentially influencing the cooked meat odor. Periods longer than 14 days were required for significant changes in the volatile profile of cooked horse meat under the study conditions.

Characterization of volatile compounds of cooked wild Iberian red deer meat extracted with solid phase microextraction and analysed by capillary gas chromatography- mass spectrometry

Lara Moran et al.

Summary: This study assessed the volatile profile of cooked wild sport-hunted Iberian red deer meat for the first time. A total of 55 volatile compounds were identified, with aldehydes and alcohols being the major components, and hexadecanal being the most abundant compound. Compounds related to grass-based diets were also detected. Odour impact ratio calculations revealed that dimethyl trisulphide, (E,E)-2,4-decadienal, decanal, and dodecanal were the most influential compounds affecting the flavor of the cooked deer meat.

Characterization of Volatile Profiles and Correlated Contributing Compounds in Pan-Fried Steaks from Different Chinese Yellow Cattle Breeds through GC-Q-Orbitrap, E-Nose, and Sensory Evaluation

Meng Wei et al.

Summary: This study characterized the volatile profiles in pan-fried steaks from different Chinese yellow cattle breeds using GC-Q-Orbitrap and E-nose. The results showed differences in the volatile organic compounds (VOCs) profiles among breeds. Through multivariate statistical analysis, 18 VOCs were identified as potential markers for differentiating the two groups. GC-Q-Orbitrap combined with chemometrics performed better than E-nose in differentiating the steaks. Six highly predictive compounds were identified, and the addition of these compounds induced a perceptible difference to panelists.

Effects of Ageing on Donkey Meat Chemical Composition, Fatty Acid Profile and Volatile Compounds

Paolo Polidori et al.

Summary: This study aimed to analyze the chemical composition, physical attributes, fatty acid profile, and volatile compounds of donkey meat samples obtained from 14 entire donkey males slaughtered at 20 months. The results showed that ageing affected the chemical composition, color parameters, cooking loss, shear force values, polyunsaturated fatty acids (PUFAs), and volatile compounds of donkey meat.

Detection of Pork in Beef Meatballs Using LC-HRMS Based Untargeted Metabolomics and Chemometrics for Halal Authentication

Anjar Windarsih et al.

Summary: This study aimed to develop a non-targeted metabolomics method using LC-HRMS and chemometrics to detect adulteration of pork in beef meatballs. The research showed that chemometrics techniques such as PCA, PLS-DA, and OPLS-DA could accurately differentiate between beef and pork meatballs and predict the presence of pork in beef meatballs with high accuracy.

Development and comprehensive HS-SPME/GC-MS analysis optimization, comparison, and evaluation of different cabbage cultivars (Brassica oleracea L. var. capitata L.) volatile components

Shouhui Wei et al.

Summary: In this study, seven parameters of headspace solid phase micro-extraction (HS-SPME) were comprehensively optimized for extracting volatile compounds from cabbage, resulting in the identification and quantification of 75 volatiles in 10 cabbage cultivars. The most abundant volatile was dimethyl ether, and pungent aroma was found to be the strongest, followed by green and fruity aromas. Purple cabbages generally had higher overall odor activity values compared to green cabbage, and the volatile profiles of different cabbage cultivars could be distinguished using radar fingerprint chart (RFC), hierarchical cluster analysis (HCA) and principal component analysis (PCA).

Elucidating the combined effect of sample preparation and solid-phase microextraction conditions on the volatile composition of cooked meat analyzed by capillary gas chromatography coupled with mass spectrometry

Lara Moran et al.

Summary: The study found that extraction temperature was the most relevant factor affecting the volatile profile of cooked meat, followed by extraction time. Higher extraction temperatures improved the detection of heavy volatile compounds, while sample preparation had little influence on the meat volatile profile.
