Summary: Food-grade compound-stabilized high-internal-phase Pickering emulsions (HIPEs) were prepared using zein, tannic acid (TA) and sodium alginate (SA). These HIPEs showed good stability and could load ll-carotene for delivery and solubilization, as well as be used as food-grade inks for 3D printing. This study provides new insights on HIPEs for nutrition delivery systems and future food manufacturing.

Emulsification mechanism of persimmon pectin with promising emulsification capability and stability

Summary: This study compared the performance of persimmon pectin (PP) in emulsion with commercial sugar beet and citrus pectins. The results showed that PP had stronger stability against high temperature and freeze-thawing compared to the commercial pectins.
