Integrated metabolome and transcriptome analysis of the regulatory network of volatile ester formation during fruit ripening in pear

Summary: Our study characterized the formation and dynamic changes of main aroma compounds in Jinxuan and Qingxin oolong tea during the manufacturing process. It was found that the two varieties of tea could be distinguished from each other in terms of fresh leaves, spread leaves, and rocked leaves. The proportions of acetic acid, 3-methylbutanal, and 2-methylbutanal significantly changed during the manufacturing process.
