Summary: In the past few decades, the beer industry has undergone a revolutionary change, with Italy witnessing the opening of many microbreweries. The development of Italian Grape Ale (IGA) has led to the creation of a new kind of fermented beverage, with distinctive features such as high ethanol content, low bitterness, and low pH. Different factors like the percentage of added grape must, process steps, tank materials, and types of fermentation contribute to the complexity and heterogeneity of IGAs. Maturation in wooden barrels combined with spontaneous fermentation is found to be the best strategy to achieve a flavor profile between wine and beer.
