Characterization and optimization of spray dried iron and zinc nanoencapsules based on potato starch and maltodextrin

Shivani Kaul et al.

Summary: This study optimized the nanoencapsulation of iron and zinc using potato starch as a carrier and spray drying mechanism. Stable nanoencapsulates were formed at 30% level with high in-vitro bioavailability and encapsulation efficiency. The nanoencapsulates exhibited particle sizes of 340.9 and 354.5 nm, and zeta potentials of 0.372 and 11.40 mV for iron and zinc, respectively.

The structural characterization, physicochemical properties, and stability of gardenia yellow pigment microcapsules

Liqin Tang et al.

Summary: GYP microcapsules were successfully prepared using different wall materials, showing good thermal stability and loading capacity. WP-MD microcapsules demonstrated significantly higher encapsulation efficiency and loading amount than other microcapsules, while spray-dried double emulsion microcapsules exhibited lower hygroscopicity. The stability studies revealed all microcapsules could improve the thermal stability, light stability, and pH stability of GYP with no significant difference between them.

Soybean (Glycine max) hull valorization through the extraction of polyphenols by green alternative methods

Ignacio Cabezudo et al.

Summary: This study optimized the extraction of polyphenols from soybean hull by alkaline hydrolysis treatment and identified various antioxidant compounds present in soybean hull using LC-MS. Alternative extraction methods based on Aspergillus oryzae fermentation and a-amylase hydrolysis were also proposed in this research.

Metabolite Contents and Antioxidant Activities of Soybean (Glycine max (L.) Merrill) Seeds of Different Seed Coat Colors

Yu-Mi Choi et al.

Summary: This study found significant variations in metabolite contents and antioxidant activities among different colored soybeans. Light-yellow soybeans contained high levels of oleic acid and low levels of stearic acid, linoleic acid, and linolenic acid, making them a potential source of high-quality soybean oil.
