Fate of foodborne pathogens during soaking and drying of walnuts

Vanessa Lieberman et al.

Summary: By reviewing recipes from online blogs and YouTube videos, typical consumer handling practices for soaked walnut kernels were identified. The fate of foodborne pathogens during soaking and subsequent drying of walnut kernels was determined. The study found that the populations of E. coli, Listeria monocytogenes, and Salmonella increased significantly after 24 hours of soaking at 22 degrees Celsius. To reduce food safety risks, consumer education should emphasize sourcing treated walnuts, kitchen sanitation, hygiene measures, and shorter soaking times or soaking at cooler temperatures.

Survey of Salmonella in raw tree nuts at retail in the United States

Guodong Zhang et al.

Summary: This study aimed to estimate the prevalence, contamination level, and genetic diversity of Salmonella in selected raw, shelled tree nuts at retail markets in the United States. Results showed varying prevalence rates of Salmonella in different types of nuts, with most samples having low levels of the bacteria. There was no significant difference in Salmonella prevalence between nuts sourced from different types of retail stores and between organic and conventional nuts.

Novel Outbreak-Associated Food Vehicles, United States

Hilary K. Whitham et al.

Summary: The study identified 28 novel food vehicles linked to outbreaks, including fish, nuts, fruits, and vegetables, with one third being imported. Outbreaks associated with novel food vehicles were more likely to span multiple states, result in food recalls, and have higher numbers of cases, hospitalizations, and deaths compared to other outbreaks.
