Assessment of poultry process hygiene and bacterial dynamics along two broiler slaughter lines in Norway

Summary: Good process hygiene is essential for safe and long-lasting broiler products. This study investigated bacterial load and diversity on chicken carcasses at different slaughtering stages in two Norwegian abattoirs. The results showed decreased bacterial load along the slaughter line, with the largest reduction after washing and chilling. Amplicon sequencing of the 16S rRNA gene revealed a shift in bacterial communities from more diverse to less diverse after chilling. Both abattoirs were assessed as low risk. This study contributes to identifying factors affecting Campylobacter and other bacteria levels during slaughter and improving meat safety.

Research Note: Persistent Salmonella problems in slaughterhouses related to clones linked to poultry companies

Summary: Salmonellosis is a major foodborne zoonosis in Europe, with poultry products as the main source of infection. The slaughterhouse has been identified as a potential source of Salmonella contamination in the poultry meat. A study was conducted to investigate a slaughterhouse with persistent Salmonella problems and found a high genetic relationship among Salmonella strains isolated during the slaughter process. It is necessary to implement molecular diagnosis methods at the field level to control Salmonella and prevent its entry into the slaughterhouse environment.

Evaluation of microbial contamination of different pork carcass areas through culture-dependent and independent methods in small-scale slaughterhouses

Summary: Routine evaluation of the slaughter process involves counting aerobic bacteria, Enterobacteriaceae, and Salmonella spp. on carcasses, with both destructive and non-destructive methods used. The study characterized the bacterial communities on different areas of pork carcasses from two slaughterhouses using both culture-based and culture-independent methods. Results show differences in microbial populations between slaughterhouses, suggesting that sampling from only one carcass area may be sufficient for hygienic evaluation of the slaughter process.

Assessing the Performance of a Real-Time Total Adenylate (ATP plus ADP plus AMP) Detection Assay for Surface Hygiene Monitoring in Food Manufacturing Plants and Commercial Kitchens

Summary: The study evaluated the performance of real-time total adenylate assay for food contact surface hygiene in 13 food processing plants and two commercial kitchens in Malaysia. It found that A3 correlated with microbial count, especially in environments associated with raw meat and ingredients with high microbial load. ROC analysis suggested an optimal threshold for A3 value to balance sensitivity and specificity.

Salmonella prevalence and persistence in industrialized poultry slaughterhouses

Summary: The study in 5 Belgian poultry slaughterhouses found that Salmonella was still present on the slaughter line despite cleaning and disinfection, with contamination found in neck skin and thigh samples. The most common serovar was Salmonella Infantis. Contamination sources included incorrect negative status of flocks and cross-contamination from previous slaughters.
