Significance of Glass Transition Temperature of Food Material in Selecting Drying Condition: An In-Depth Analysis

This comprehensive review reveals the fundamental understanding of GTT and its crucial relationship with physio-structural and transport properties of food items, emphasizing the importance of understanding GTT in determining appropriate drying conditions and preserving food quality.

Effect of variable temperature levels on drying characteristics and quality indices of rice in continuous drying and multi-stage intermittent drying

Summary: The aim of this study was to investigate the effect of variable temperature levels on the drying characteristics and quality indices of rice. The results showed that drying temperature had significant impacts on stress cracking index, color difference, drying time, head rice yield, whiteness index, and taste value. The multistage intermittent drying method at a temperature level of ?5 showed the highest comprehensive score of 1.431. These findings are important for optimizing the drying process for rice and improving its yield and quality.

Experimental and numerical study of intermittent drying of rough rice in a combined FIR-dryer
