Enhancement of antioxidant activities and stabilities of quercetin and isoquercetin through the combination of nanoencapsulation and hydrogel incorporation

Summary: This study investigates the potential improvement of antioxidant activities and solubilities for quercetin (QUE) and isoquercetin (IQUE) through a combination of nanoencapsulation and gel incorporation. The results show that the antioxidant activities of QUE and IQUE increase by 2.5 and 3.5 times, respectively, after nanoencapsulation. Furthermore, QUE and IQUE NP-filled gelatin gels exhibit higher antioxidant stabilities and physical properties compared to free QUE and IQUE.
