Effect of high-voltage electrical discharge treatment on multi-element content in cocoa shell and chocolates with cocoa shell

Veronika Barisic et al.

Summary: The study found that high voltage electrical discharge treatment led to a decrease in potassium, cadmium, uranium, cobalt, nickel, iron, molybdenum, chromium, manganese, and copper content in cocoa shell, but an increase in calcium. Chocolates made with added cocoa shell were deemed safe for human consumption, but the control of toxic element content still needs to be carefully managed.

Production of blueberry pulp powder by microwave-assisted foam-mat drying: Effects of formulations of foaming agents on drying characteristics and physicochemical properties

Ruili Gao et al.

Summary: This study investigated the effects of foaming agents on the drying characteristics and physicochemical indicators of blueberry pulp powder production. The optimal formulation with specific ratios of egg white powder, maltodextrin, and carboxymethylcellulose showed high drying rate and desired physicochemical quality. The results may guide the production of high-quality powder with specific characteristics like high moisture content, heat sensitivity, and viscosity.

Influence of the extraction method on the recovery of bioactive phenolic compounds from food industry by-products

Emilio Gil-Martin et al.

Summary: Agro-food industries produce a large amount of non-edible waste and by-products, which can be used as raw materials for recovering active phytochemicals. Phenolic compounds are particularly important in this field due to their abundance in plant residues and their functional properties in nutraceuticals, cosmetics, and biomedical formulations. Sample extraction is necessary in research as it improves the value of target phytochemicals through desorption and dissolution of the matrix.

Testing of a new high voltage electrical discharge generator prototype at high frequencies to assist anthocyanin extraction from blueberries

R. Diaz-Alvarez et al.

Summary: Traditional extraction methods using organic solvents are harmful to human health. Using high voltage electrical discharge (HVED) treatments can increase cell tissue permeability and improve mass transfer rates during extraction. The study demonstrates that HVED treatment enhances cell permeability and increases anthocyanin extraction levels in blueberries.

Impact of pre-treatment with pulsed electric field on drying rate and changes in spinach quality during hot air drying

Koya Yamakage et al.

Summary: This study compared the effects of pulsed electric field (PEF), hot water (HW), and control (CONT) on drying rate, shrinkage, and quality parameters of spinach during hot air drying. Results showed that PEF treatment increased drying rate, inhibited shrinkage, and reduced degradation of L-ascorbic acid (L-AsA) and color compared to HW treatment. This suggests that PEF pre-treatment is effective in reducing drying time and producing high-quality dried spinach.

Effect of Freeze-Thaw Cycles on Juice Properties, Volatile Compounds and Hot-Air Drying Kinetics of Blueberry

Lin Zhu et al.

Summary: This study investigated the effects of freeze-thaw cycles on the juice properties and aroma profiles of blueberry, revealing that FT treatment can increase juice yield, decrease anthocyanins contents and antioxidant activities, alter aroma profiles, and affect the composition of volatile substances. It was also found that one FT treatment can shorten the drying time of blueberries by about 30% and increase ethanol content. The results are beneficial for processing frozen blueberries into juice or dried fruits.
