Isolation and production optimization of a novel milk-clotting enzyme Bacillus velezensis DB219

Summary: This study aimed to isolate and identify a strain with high milk-clotting activity and low proteolytic activity, and optimize the fermentation conditions for maximum milk-clotting enzyme production. A strain of Bacillus velezensis DB219 with high activity was isolated and identified. The optimal fermentation conditions were determined through experiments. DB219 MCE production was significantly improved.
