Advances in probiotic encapsulation methods to improve bioactivity

Chenyuan Sun et al.

Summary: The health benefits of probiotics are often diminished due to their destruction during food storage and digestion, resulting in reduced biological activity and colonization in the gut. Encapsulating probiotics can significantly improve their effectiveness and survival rate in the digestive system. Various encapsulation methods, such as hydrogel technique, emulsification technique, electrospinning technology, biofilm self-encapsulation, and tableting technique, have been developed to enhance the organization ability of probiotics and enhance their health benefits.

Porous Alginate Scaffolds Designed by Calcium Carbonate Leaching Technique

Alena Wulf et al.

Summary: One of the main challenges in modern tissue engineering is designing biocompatible scaffolds with finely tuned porous architecture and the ability to load bioactive molecules that guide cell growth and differentiation. This study proposes a strategy to design porous alginate scaffolds by leaching sacrificial vaterite CaCO3 microspheres packed in alginate, resulting in well-tuned architecture. The pore size and interconnectivity of the scaffold depend on the dimensions and packing of the CaCO3 spheres, as well as the concentration of alginate. By varying these parameters, it is possible to achieve almost complete pore interconnectivity or no interconnectivity at all. The mechanical properties of the scaffolds are suitable for cell seeding, with the potential for encapsulation of macromolecules in individual pores to create a multifunctional scaffold. Culturing different cell lines on these scaffolds showed promising results in terms of cell viability and adhesiveness.

Utilization of xanthan to stabilize water in water emulsions and modulate their viscosity

Yuwen Meng et al.

Summary: Water-in-water emulsions were prepared by mixing dextran and poly(ethylene oxide) solutions at different volume fractions. Xanthan was added as a stabilizer, increasing viscosity and stability of the emulsions. The microstructure and shear-thinning behavior of the emulsions were studied using confocal scanning laser microscopy and a rheo-optical device, showing the formation of thin strands that broke up into small drops under shear.

Biopolymer-Based Multilayer Microparticles for Probiotic Delivery to Colon

Sepehr Talebian et al.

Summary: The potential health benefits of probiotics may not be realized due to their reduced viability during storage and gastrointestinal transit. Microencapsulation using biopolymers has been utilized to improve the resistance of probiotics to critical conditions. However, most existing methods only provide single layer protection, which is less effective than more sophisticated approaches. This review discusses emerging methods for multilayer encapsulation of probiotics using biopolymers, and examines the correlation between fabrication techniques and microparticle properties. Novel materials and approaches for multilayer structures are highlighted.

Properties and stability of water-in-water emulsions stabilized by microfibrillated bacterial cellulose

Chan Lei et al.

Summary: In this study, water-in-water (W/W) emulsions stabilized by bacterial cellulose (BC) nanofibrils were successfully prepared. The addition of BC did not significantly change the droplet size of the emulsion, but decreased the apparent viscosity, storage modulus, and loss modulus. The stabilization mechanism was attributed to the formation of a viscoelastic network structure by BC nanofibrils, which resulted in the improved stability of the W/W emulsion.

A review of the microencapsulation techniques for the incorporation of probiotic bacteria in functional foods

Georgia Frakolaki et al.

Summary: Probiotic strains are claimed to provide health benefits to the human body when consumed in adequate amounts. In order to function optimally, these bacteria should survive in high populations through the gastrointestinal tract, which can be achieved through techniques like microencapsulation and enrichment with prebiotic substances. Food products used as carriers for probiotic bacteria may have limitations related to cell viability, acidity of the matrices, processing, and storage conditions.

Assessment of the stability of water in water emulsions using analytical centrifugation

Lingsam Tea et al.

Summary: The study prepared water-in-water (W/W) emulsions by mixing aqueous dextran and polyethylene oxide (PEO) solutions, and found that addition of the polysaccharide chitosan inhibited coalescence of dextran droplets in the PEO phase to varying extents depending on concentration and pH. The evolution of the transmission profile during centrifugation was determined by the rates of coalescence and sedimentation of droplets, with the rate of coalescence being influenced by the resistance of the chitosan layer. The efficacy of stabilization of W/W emulsions could be rapidly quantitatively assessed, but predicting behavior under gravity from centrifugation results was challenging.

Summary: The stable water-in-water emulsion formed by mixing dextran and hydroxypropyl methylcellulose with beta-lactoglobulin microgels was studied for its microstructure and stability under different conditions. The microgels accumulating at the liquid-liquid interface contributed to the stability of the emulsion at pH 3-5, while destabilization occurred at higher pH levels due to microgels staying in the continuous phase rather than at the interface.
