The potential mediation of hypoxia-inducible factor-1 & alpha; in heat shock protein 27 translocations, caspase-3 and calpain activities and yak meat tenderness during postmortem aging

Summary: The aim of this study was to investigate the influence of hypoxia-inducible factor-1a on heat shock protein 27 and cytochrome c translocation, yak meat microstructure destruction, and endogenous enzymes activities in order to understand the tenderization process after slaughter. The results showed that hypoxia-inducible factor-1a activation promoted heat shock protein 27 migration and cytochrome c release, leading to increased caspase-3 activity and apoptosis rate. These findings indicate that hypoxia-inducible factor-1a affects caspase-3 activity and tenderness of postmortem muscle through distinct regulatory mechanisms involving heat shock protein 27 and cytochrome c mediation.

Effect of Pre-Slaughter Transport Stress on Protein S-Nitrosylation Levels of Pork during Postmortem Aging

Summary: This study investigated the impact of pre-slaughter transport stress on the protein S-nitrosylation levels of pork during aging. Pigs were randomly divided into two groups: 3 h transport (stress group) and 3 h transport followed by 3 h resting (control group). The results showed that the stress group had higher NOS activity and nNOS expression compared to the control group. Furthermore, protein S-nitrosylation levels in the stress group were higher during postmortem aging. This study provides novel insights into the mechanism of meat quality changes in response to pre-slaughter stress.
