Convective drying of orange pomace at different temperatures and characterization of the obtained powders

Summary: This study revealed that drying temperature has a significant impact on the physical and chemical properties of orange pomace. Increasing drying temperature can improve some characteristics of orange pomace powder, such as emulsifying activity and swelling capacity, while decreasing antioxidant capacity and vitamin C content. However, no noticeable changes were observed in functional groups or structure due to temperature.

Characterization of Berry Pomace Powders as Dietary Fiber-Rich Food Ingredients with Functional Properties

Summary: This study evaluated and compared the functional properties of dried pomace powders from cranberries, lingonberries, sea buckthorns, and black currants. The powders were rich in dietary fiber and exhibited good water-holding and swelling capacities. They also showed hypoglycemic and hypolipidemic properties in vitro. The study suggests that these berry pomace powders have potential applications in food products.
