Summary: Alpeorujo, a semi-solid residue from the olive oil industry, contains phenolic compounds that can be used as natural preservatives in the food industry. This study optimized supercritical fluid extraction of antioxidant compounds from alperujo and compared the antioxidant and antimicrobial potential of extracts from Arbequina and Coratina. Coratina extracts showed higher total phenolic and tocopherol content, but overall, there was no clear correlation between these values and antioxidant activity. Additionally, both Arbequina and Coratina SFE extracts demonstrated moderate bacterial inhibitory potential.

Subcritical treatment of olive oil: Minor phenolic composition and antioxidant properties of the solvent extracts
