Effects of probiotic adjuncts on physicochemical properties, organic acids content, and proteolysis in cheese prepared from buffalo milk

Summary: The aim of this study was to evaluate the effects of probiotic adjuncts on various characteristics of buffalo milk probiotic Cheddar cheese. The results showed significant differences in physiochemical characteristics, organic acids, water-soluble nitrogen percentage (WSN%), total free amino acids (TFAA), and proteolytic patterns between the control and probiotic cheese. The use of B. bifidum as a probiotic adjunct resulted in higher WSN% and TFAA compared to the other probiotic cheese samples. The incorporation of probiotic adjuncts enhanced the hydrolysis of alpha s(1-) casein in Cheddar cheese.

Physicochemical, Rheological, & Sensory Characteristics of Yogurt Fortified with Ball-Milled Roasted Chickpea Powder (Cicer arietinum L.)

Summary: This study evaluated the effects of ball-milled roasted chickpea powder on the physicochemical, rheological, and sensory properties of supplemented yogurt. The results showed that the pH decreased and color became brighter and more yellow with increasing powder concentration. The supplemented samples had higher firmness and lower syneresis compared to the control. The addition of more than 3% roasted chickpea resulted in smoother particle dispersion and lower shear-thinning. The study suggests that roasted chickpea powder can be used as a functional ingredient in yogurt production.

Changes in structural and chemical composition of insoluble dietary fibers bound phenolic complexes from grape pomace by alkaline hydrolysis treatment

Summary: This study aimed to explain the evolution process of bound phenolics in IDF through structural modifications after alkaline hydrolysis, and to explore their functional characteristics. The results showed that alkaline hydrolysis caused microstructural changes in IDF, resulting in the disintegration of linkages between cellulose microfibers and other components. IDF-bound phenolics exhibited higher antioxidant activity. HPLC analysis confirmed the presence of 6 phenolic compounds in IDF.

Linoleic acid complexes had sponge-like structure, while stearic acid complexes exhibited flaky structure, with V-type complexes showing higher digestion resistance compared to native starch complexes.

Summary: This study optimized the ultrasound-assisted extraction (UAE) of dietetically important diterpene steviol glycosides (SGs) from Stevia rebaudiana leaves. The results showed that UAE, under the optimized conditions of ethanol concentration, sonication time, and leaf-solvent ratio, achieved the highest extract yield. UAE was found to be superior to conventional maceration extraction (CME) in terms of resource consumption, total extract yield (TEY), and SG yields. The findings support the use of UAE as an ecofriendly and efficient extraction method for industrial scale-up.

The Influence of Different Extraction Methods on the Structure, Rheological, Thermal and Functional Properties of Soluble Dietary Fiber from Sanchi (Panax notoginseng) Flower

The results showed that alkaline extraction method had the highest extraction yield, while homogenization and ultrasonication treatments caused pore compaction in the microstructures. Additionally, homogenization and ultrasonication extracts exhibited higher functional properties, making them suitable for the development of food products.
