Proteomic approach to unveil the ochratoxin A repression by Debaryomyces hansenii and rosemary on Penicillium nordicum during dry-cured fermented sausages ripening

Summary: This study examined the effectiveness of Debaryomyces hansenii yeast and rosemary leaves as biocontrol agents against Penicillium nordicum in the production of dry-cured fermented sausages. The results showed that adding yeast or rosemary leaves to the meat dough or casings reduced OTA accumulation. The presence of yeast led to a decrease in the abundance of P. nordicum proteins involved in OTA biosynthesis, and the combination with rosemary interfered with the cell wall integrity pathway linked to mycotoxin synthesis in molds.

Summary: Ochratoxin A (OTA) is a mycotoxin that is produced by fungi in feeds or foods, and it has been proven to have nephrotoxic, hepatotoxic, teratogenic, neurotoxic, genotoxic, carcinogenic, and immunotoxic effects on animals and humans. Pork meat and pork meat products are important sources of chronic dietary exposure to OTA, and establishing maximum limits for OTA in pork meat and meat by-products is necessary to protect human health.

Biocontrol of ochratoxigenic Penicillium nordicum in dry-cured fermented sausages by Debaryomyces hansenii and Staphylococcus xylosus

Summary: This study evaluated the effect of two microorganisms isolated from dry-cured meat products, Debaryomyces hansenii and Staphylococcus xylosus, as biocontrol agents (BCAs) against the ochratoxin A (OTA) producing mould Penicillium nordicum during the ripening of dry-cured fermented sausages. The BCAs were able to colonise and develop throughout the processing, and although they did not reduce the growth of P. nordicum, a decrease in OTA was observed in sausages inoculated with D. hansenii individually or combined with S. xylosus.

Proteomic evaluation of the effect of antifungal agents on Aspergillus westerdijkiae ochratoxin A production in a dry-cured fermented sausage-based medium

Summary: The effects of Debaryomyces hansenii, rosemary derivatives, and a commercial antifungal preparation were tested against Aspergillus westerdijkiae in dry-cured meat products. The results showed that using Debaryomyces hansenii alone or in combination with rosemary can significantly reduce the production of ochratoxin A, suggesting its potential as a preservative agent.
