Variation in structural and in vitro starch digestion of pulse cotyledon cells imposed by temperature-pressure-moisture combinations

Summary: The digestibility of starch in whole pulses can be affected by the structural characteristics of food, which can be modified by different processing methods like high-pressure steam and hydrothermal treatment. The relative crystallinity of cells decreased after both treatments, but the differences were insignificant when cells were treated with high-pressure steam under higher moisture content. Starch digestion increased with higher moisture content in high-pressure steam-treated cells, but it was still lower than in hydrothermal treatment samples. The permeability of cell walls influenced the starch digestibility, with cells having higher wall permeability showing relatively higher digestibility. This study suggests that optimizing cell wall structure through processing variables can enhance the enzyme susceptibility to starch in cells.

A study on the structural, physicochemical, rheological and thermal properties of high hydrostatic pressurized pearl millet starch

The results show that high-pressure treatment modifies the structure, morphology, pasting, thermal, and rheological properties of the starch. The treatment increases water holding capacity and hydration ability of the starch, decreases gelatinization temperature and enthalpy, and reduces viscosity. Additionally, pressure and time also increase the elasticity of the starch samples.
