The effect of carboxymethylation on the macromolecular conformation of the (1 → 3)-/-D-glucan of curdlan in water

Zhixiang Cai et al.

Summary: The study investigates the chain conformational changes in curdlan during carboxymethylation, revealing a transition from triple helix to random coil with increased carboxymethylation levels. The distribution of carboxymethyl substituents within anhydroglucose units and the critical DS value of 0.25 play key roles in determining the chain conformation of curdlan. Additionally, intermolecular hydrogen bonding between C2 hydroxyls in AGU is found to sustain the triple helical conformation, which weakens with higher DS values.
