Evaluating the failure to bloom in dark-cutting and lactate-enhanced beef longissimus steaks

Effect of frozen storage on the lipid oxidation, protein oxidation, and flavor profile of marinated raw beef meat

Summary: This study found that long-term frozen storage affects the flavor compounds in marinated raw beef meat, with six flavors identified as markers to indicate the impact of frozen storage in all beef samples. The markers were mainly aldehydes and alcohols, suggesting their origin from lipid oxidation. Thiobarbituric acid reactive substances significantly increased in the first two months of frozen storage and then decreased slightly, while carbonyl content increased linearly in all samples during frozen storage.

The rise of thawing drip: Freezing rate effects on ice crystallization and myowater dynamics changes

Summary: This study investigated the ice crystallization and myowater dynamics changes in frozen bovine muscle and found that ultra-fast freezing led to a narrow distribution of ice crystals size with higher solubility, lower surface hydrophobicity, and stable myofibrillar protein structure. Ultra-fast freezing also resulted in significantly lower thaw loss compared to slow freezing. The study observed myowater redistribution during thawing, with slow freezing causing major migration of water from immobile water to free water. Proton density imaging showed the seepage of free water from myofibrils to the surface of the muscle, contributing to the formation of thawing drip.

Effect of energy metabolism and proteolysis on the toughness of intermediate ultimate pH beef

Summary: The aim of this study was to investigate the tenderness and energy metabolism attributes of beef Longissimus lumborum under different final pH conditions. The results showed that the intermediate pH group had higher shear force, lower μ-calpain activity, and higher levels of heat shock protein 27 and protein oxidation. Metabolomics analysis revealed differential metabolites related to glycolysis, the tricarboxylic acid cycle, and oxidative phosphorylation among pH groups. These findings contribute to the understanding of the relationship between beef tenderization and energy metabolism.

Preliminary study on the characterization of Longissimus lumborum dark cutting meat in Angus x Nellore crossbreed cattle using NMR-based metabolomics

Summary: This preliminary study aimed to evaluate meat quality properties, muscle metabolite profile, and metabolic pathways associated with dark cutting meat in Angus x Nellore crossbreed cattle. The results showed that dark cutting meat exhibited distinct meat quality attributes and concentrations of post-mortem glycolytic metabolites compared to normal meat, and appeared to be correlated with mitochondrial activity. Pathway analysis indicated that differentiation between dark cutting and normal meat was linked to energetic pathways such as starch and sucrose metabolism, amino sugar, nucleotide sugar metabolism, and glycolysis or gluconeogenesis.
