The impacts of complexation and glycated conjugation on the performance of soy protein isolate-gum Arabic composites at the o/w interface for emulsion-based delivery systems

Summary: This study investigated the preparation of soy protein isolate (SPI)-gum Arabic (GA) composites through complexation and glycated conjugation, and evaluated their functionality. It was found that the composites prepared by conjugation showed better emulsifying and stabilizing abilities, lower release rate, and higher skin penetration ability. The complexation and conjugation abilities of GA with two major individual proteins in SPI were also evaluated, and one protein showed higher tendency to form conjugates with GA.

Summary: Nanoemulsion encapsulated in ionotropic hybrid hydrogel beads of alginate, chitosan, gelatin and polyethylene oxide can effectively deliver hydrophobic active ingredients like curcumin, enhancing their bioavailability and biological activities. The release behavior in simulated gastric and intestinal fluids showed faster release in gastric fluid, potentially due to mesh size, hydration extent, and interaction with Ca2+ ions. The released curcumin in gastric fluid showed significantly greater free radical scavenging and antibacterial activities compared to intestinal fluid.

Encapsulation and sustained release of curcumin by hawthorn pectin and Tenebrio Molitor protein composite hydrogel

Summary: This study investigated the complex gelation of hawthorn pectin and Tenebrio Molitor protein under different pH values, mixing ratios, and Ca2+ concentrations. The results showed that the gel had the highest polymer concentration at a mixing ratio of 2:1 and a pH value of 3.35. The hydrogel with a Ca2+ concentration of 15 mmol/L exhibited improved properties and showed potential as a delivery system for active components.

Encapsulation of beta-carotene in the SPI-PEP conjugate-stabilized emulsion improved its bioavailability and antioxidant activity. Changes in the spatial structure of the conjugate led to increased water solubility and emulsibility, promoting lipid digestion and the formation of mixed micelles for improved bioavailability of beta-carotene.
