Milk heat treatment affects microbial characteristics of cows' and goats' Jben traditional fresh cheeses

Summary: This study investigated the effects of heat treatment and species on the microbiological characteristics, pH and acidity of Algerian traditional fresh cheese Jben produced from raw or pasteurized milk of cows and goats. Results showed that cheeses produced from pasteurized milk had better sanitary quality than those from raw milk. The data may contribute to improving the cheese-making process in small scale, using milk from different species.

Listeria monocytogenes inhibition by lactic acid bacteria and coliforms in Brazilian fresh white cheese

Summary: This study evaluated the influence of coliforms on L. monocytogenes behavior in Minas fresh cheese. The results showed that the presence of coliforms can inhibit L. monocytogenes, but a high concentration of lactic acid produced by coliforms can counteract this effect. Therefore, it is recommended that producers maintain good hygiene practices to prevent contamination with both L. monocytogenes and coliforms.

Modelling the biphasic growth of non-starter lactic acid bacteria on starter-lysate as a substrate

Summary: This study investigated the dynamics of interaction between starter and non-starter strains in cheese, revealing that biphasic growth was observed mainly in strains able to utilize the starter-lysate as an energy source. The growth of two Lactococcus lactis strains was not affected by the starter-lysate, while thirteen non-starter strains showed increased growth rates. The extent of growth of non-starter strains on the starter-lysate was found to be species and strain dependent.

Summary: During the production of Pe?lardon cheese, microbial diversity increases, with Lactococcus lactis identified as the main acidifying bacterium and playing a key role in amino acid metabolism alongside L. mesenteroides and Geotricium candidum. These three species dominate in the whey. Meanwhile, other species like L. paracasei, Enterococcus faecalis, Penicillium commune, and Scopulariopsis brevicaulis, which likely come from the cheese-making environment, are positively correlated with the unique aroma of Pe?lardon cheese.
