Summary: This study develops a new non-destructive method to recover lactic acid bacteria (LAB) and yeasts from fermented olives' biofilm. The method preserves the integrity of olives while reducing the amount of eukaryotic DNA released from vegetable cells, improving the accuracy of microbiota analysis, and laying the foundation for validating probiotic microorganisms in table olives.
