Mechanistic understanding of the effect of zein-chlorogenic acid interaction on the properties of electrospun nanofiber films

Summary: This study investigated the interaction mechanism between zein and chlorogenic acid (CA) and its effect on the performance of coaxial nanofiber films. The results showed that the interaction between zein and CA was dominated by hydrogen bonds and electrostatic interactions, enhancing the mechanical properties but reducing the thermal stability of nanofiber films. The presence of CA endowed the films with antioxidant and antibacterial properties. This research provides important insights into the impact of protein-polyphenol interactions on the properties of electrospun nanofiber films, which has practical applications in improving food safety.

Integration of physicochemical, molecular dynamics, and in vitro evaluation of electrosprayed ?-oryzanol-loaded gliadin nanoparticles

Summary: Electrospraying was used to fabricate gliadin particles incorporated gamma-oryzanol in order to improve its stability and release behavior. The resulting particles exhibited a round shape with an average diameter of 481.56 +/- 283.74 nm. The study demonstrated the successful formation of gamma-oryzanol-loaded gliadin particles with enhanced thermostabilization and a homogenous distribution, as well as the gradual release of gamma-oryzanol in food simulants. MTT assays showed that the particles had concentration and time-dependent inhibitory effects on HT-29 cells.

In-silico zein/tannic acid colloidal nanoparticles and their activity at oil and water interface of Pickering emulsion using molecular dynamics simulation

Summary: This study used a computational method to explain the activity of zein-based colloidal nanoparticles at the interface between water and oil phases. The results showed that the zein-based colloidal nanoparticles were able to surround the oil phase at the interface, increasing the density of oil molecules around their hydrophobic surface and promoting more van der Waals interactions.

In-silico behavior of dissolved prolamins under electric field effect applied by electrospinning process using molecular dynamics simulation

Summary: The molecular dynamics simulations revealed that alpha-zeins and alpha-gliadin exhibited unstable structures and loss of native secondary structure domains when dissolved in 70% aqueous ethanol, showing characteristics of random coil. The selection of an electric field of 2 V/nm for jet formation under different electric fields was found to be the most effective for stabilizing jets. Electrospinning simulations of zeins and gliadin under the same electric field led to the generation of fibrous proteins with significant feature loss.

Development of pH indicators from nanofibers containing microalgal pigment for monitoring of food quality

Study of interaction between zein and curcumin using spectroscopic and in silico techniques
