Comprehensive characterization of lotus root polysaccharide-phenol complexes

Yang Yi et al.

Summary: Phenolic binding significantly altered the molecular weight distribution and aggregation behavior of LRPs, enhancing their antioxidant activities. Particularly, catechin binding improved the macrophage-stimulating effect of LRPs. Noncovalent interaction with phenolic compounds is a promising method for the structural and functional improvement of LRPs.

Adsorption modeling of Cu and Zn in single and combined systems onto activated carbon of olive stone

Soufiane Youcef et al.

Summary: The performance of olive stone activated carbon (OSAC) prepared in the presence of sodium hydroxide for removing Cu2+ and Zn2+ was studied. The equilibrium efficiency for Cu2+ and Zn2+ on OSAC was 98.88% and 96.45% respectively. The pH value and initial metal concentration were important parameters affecting the adsorption process.

Extraction of surface-active polymers from the compost of olive processing waste

Aikaterini Koliastasi et al.

Summary: In this study, polysaccharides and proteins with potential use as emulsifiers and thickeners are extracted from olive processing wastes through a 6-month composting cycle. The composition and oil-water interface activity of the extracts are characterized, showing changes in composition and properties over time and at different pH levels. This research highlights the potential for utilizing food processing waste as valuable food ingredients with environmental benefits and economic advantages.

Novel Pickering High Internal Phase Emulsion Stabilized by Food Waste-Hen Egg Chalaza

Lijuan Wang et al.

Summary: The study explores the utilization of chalaza as a natural emulsifier for high internal phase emulsions (HIPEs). By adjusting the pH and ionic strength, stable Pickering HIPEs were successfully generated with excellent stability against coalescence and flocculation during storage. Various rheological models were tested on the HIPEs, demonstrating their outstanding stability and the formation of a percolating 3D-network providing viscoelastic and self-standing features.
