Emulsion gel stabilized by tilapia myofibrillar protein: Application in lipid-enhanced surimi preparation

Summary: Surimi products rich in lipids were prepared using myofibril protein emulsion gel as carriers, resulting in stable embedding of oil droplets and prevention of water and oil leakage. The emulsion gel exhibited a hybrid network structure composed of cross-linked myofibril protein polymers and protein-stabilized emulsion droplets, with a high elastic modulus. Adding myofibril protein emulsion gel significantly reduced the gel strength of surimi products.

An optimized approach to recovering O/W interfacial myofibrillar protein: Emphasizing on interface-induced structural changes

Summary: Optimized recovery approach for interfacial myofibrillar protein (MP) was established by optimizing protein concentration, Tween-20 concentration, and different accelerating treatments. The study found that interfacial MP in a 2.5 mg/ml protein-stabilized emulsion could be fully recovered in 96 h with 4% (v/v) Tween-20 under agitation treatment, while freeze-thawing treatment could accelerate the desorption process but might cause damage to the MP structure. Results suggest that the tertiary structure of interfacial MP unfolded to expose hydrophobic residue branch for interfacial adsorption and film formation, with changes in alpha-helix and beta-sheet.

Physicochemical properties and microstructure of composite surimi gels: The effects of ultrasonic treatment and olive oil concentration
