Chlorogenic acid and Epicatechin: An efficient inhibitor of heterocyclic amines in charcoal roasted lamb meats

Reactions of plant polyphenols in foods: Impact of molecular structure

Polyphenols with o-diphenol structure oxidize in foods and react fast with amino acid residues, potentially changing protein functional properties. Additionally, polyphenols with hydroxyl groups in meta-position tend to favor reactions with carbonyls.
