Integrating identification and targeted proteomics to discover the potential indicators of postmortem lamb meat quality

Summary: The aim of this study was to identify potential indicators of lamb meat quality using TMT and PRM-based proteomics combined with bioinformatic analysis. Lamb muscles were divided into three different meat quality groups based on tenderness, colour, and water-holding capacity. The abundance of PGK1, ENO3, MYBPC1, and MYLPF was significantly different in the three groups and could serve as potential indicators for meat quality. Furthermore, the metabolic processes of glycolysis, oxidative phosphorylation, and muscle contraction showed distinct changes in different groups and were found to be the key biological pathways influencing meat quality.
