Utilizing Hydrothermal Processing to Align Structure and In Vitro Digestion Kinetics between Three Different Pulse Types

Summary: This study investigates the interrelated effect of intrinsic and extrinsic factors on the structural architecture and digestive consequences of pulses. The results show that processing to equivalent microstructural properties leads to similar starch and protein digestion kinetics, regardless of the pulse type. Additionally, the digestive behavior of isolated cotyledon cells is representative of the digestion behavior of whole pulses.

Summary: This study investigated the upscaling of pea protein extraction from laboratory scale to pilot scale and compared the protein extraction efficiency from dry milled and pre-treated peas. The protein yield increased for both types of peas when using the decanter centrifuge at pilot scale. The design of experiments showed that the acceleration, mass flow, and differential speed had an impact on the protein yield.
