How Does LC/MS Compare to UV in Coffee Authentication and Determination of Antioxidant Effects? Brazilian and Middle Eastern Coffee as Case Studies

Summary: This study investigated the phytochemical composition and antioxidant activity of Brazilian and Middle Eastern coffee using various analytical methods. Through the use of global natural product social molecular networking, new metabolites in coffee seeds were discovered. Chemometric tools and UV spectrometry were also employed to analyze the characteristics of coffee. The results demonstrated that caffeoylquinic acid and caffeine were potential antioxidant markers in unroasted coffee, while dicaffeoyl quinolactone and melanoidins were potential markers in roasted coffee.
