Ultrasound-assisted preparation of lactoferrin-EGCG conjugates and their application in forming and stabilizing algae oil emulsions

Summary: This study aimed to prepare lactoferrin-epigallocatechin-3-gallate (LF-EGCG) conjugates and evaluate their ability to protect emulsified algal oil against aggregation and oxidation. The ultrasound-assisted alkaline treatment significantly improved the efficiency of conjugation and reduced the reaction time. The formation of LF-EGCG conjugates enhanced the antioxidant activity and emulsifying properties of LF, making it a promising ingredient in fortified foods.
