Edible coating as postharvest management strategy for shelf-life extension of fresh tomato (Solanum lycopersicum L.): An overview

Summary: Tomatoes have a short shelf-life and are susceptible to microbial decay and mechanical damage, leading to significant postharvest losses. The use of edible coatings is a promising technology to preserve the quality and prolong the shelf-life of tomatoes. However, there is currently no comprehensive review specifically addressing the requirements of edible coatings for tomatoes. This review aims to provide information on desirable coating properties for tomatoes and summarize recent studies on the application of edible coatings.

The results showed that COS treatment improved fruit quality by enhancing color, nutrient content, and flavor-associated volatiles. Additionally, COS treatment enhanced ethylene production and signaling, indicating its role in regulating fruit ripening and quality.

Direct ionization and solubility of chitosan in aqueous solutions with acetic acid

Summary: This study investigated the direct solubilization of solid chitosan in an aqueous acetic acid medium without the addition of salt using an inverse approach based on a mathematical model. The main finding was that diluted systems lacking salt showed a tendency towards an apparent dissociation constant of around 6.44 as polymer concentration increased.

Ultrasound in the deproteinization process for chitin and chitosan production

Summary: Chitin and chitosan are widely studied for food preservation and active packaging applications. This study proposed modification to the chemical synthesis of chitin from shrimp shells using high-frequency ultrasound. The impact of sonication time on the deproteinization step of chitin chitosan preparation was examined. The chemical identities of chitin and chitosan were verified using infrared spectroscopy. The influence of ultrasound on the deacetylation degree, molecular weight and particle size of the biopolymer products was analysed. The application of ultrasound resulted in reduced protein content and particle size of chitin, and high deacetylation degree and medium molecular weight of chitosan. The chitosan films obtained by employing biopolymer subjected to sonication for 15, 25 and 40 min showed high values of luminosity, chromatid and chrome for beef preservation. These characteristics were maintained even after ten days of packaging.
