Controlling the pasting, rheological, gel, and structural properties of corn starch by incorporation of debranched waxy corn starch

Summary: The addition of DWCS to NCS resulted in a linear decrease in pasting properties, while stability ratio, peak time, and peak temperature increased. Moreover, DWCS altered the rheological properties of NCS gels by decreasing consistency coefficient K and increasing flow behavior index n. Additionally, DWCS reduced the values of short-range ordered degree and relative crystallinity, leading to a more disordered microstructure in NCS gels.

Effect of ll-cyclodextrins on the physical properties and anti-staling mechanisms of corn starch gels during storage

Summary: The aim of this study was to investigate the effects of ll-cyclodextrin (ll-CD) and hydroxypropyl-ll-cyclodextrin (HP-ll-CD) on the physical and anti-staling properties of corn starch (CS). It was found that the addition of ll-CDs significantly changed the physical properties and anti-staling properties of CS gel. The ll-CDs incorporation delayed the crystallization of CS gel, and the introduction of hydroxypropyl groups (HP-ll-CD) had a better effect.

Effect of inulin with different degrees of polymerization on dough rheology, gelatinization, texture and protein composition properties of extruded flour products

Summary: This study investigated the effects of inulin with different degrees of polymerization on the rheology, gelatinization properties, texture, and protein composition of extruded flour products. The results showed that the incorporation of inulin significantly improved the rheological properties of the dough, with increased storage and loss modulus. It also improved the gelatinization characteristics. Texture analysis revealed that the addition of inulin resulted in extruded flour products with lower hardness, increased elasticity, and higher moisture content. Protein polymerization and gluten strength were enhanced after the addition of inulin. Principal component analysis confirmed the significant effect of inulin on the dough and extruded flour products.
