Hemoglobin adducts of acrylamide in human blood-What has been done and what is next?

Marie Pedersen et al.

Summary: Acrylamide, a carcinogen formed in many common foods, has harmful effects in animals and can cross the placenta to affect fetal growth. The impact of acrylamide exposure on human health is poorly understood, with uncertain levels of dietary exposure. Studies on hemoglobin adducts suggest that dietary exposure to acrylamide varies greatly and more research is needed to evaluate health effects.

Developmental neurotoxicity of acrylamide and its metabolite glycidamide in a human mixed culture of neurons and astrocytes undergoing differentiation in concentrations relevant for human exposure

Anna Jacobsen Lauvas et al.

Summary: The study examined the effects of AA and GA exposure on neural stem cells derived from human induced pluripotent stem cells. Results showed that low concentrations of AA and GA increased cell viability and proliferation markers, with GA being about ten times more potent than AA. GA exposure at later differentiation stages resulted in increased expression of BDNF and fewer synapses, while AA exposure tended to decrease differentiation. Neuronal differentiation and maturation were disrupted after exposure to AA and GA.

A Review of Dietary Intake of Acrylamide in Humans

Summary: The dietary intake of acrylamide is a global health concern, with studies showing that children have higher intake levels compared to adults. Research from Europe and Asia generally estimates lower acrylamide intake in diets compared to studies from the USA, highlighting the potential for reduced exposure among certain populations.

Benzene metabolite SPMA and acrylamide metabolites AAMA and GAMA in urine of children and adolescents in Germany - human biomonitoring results of the German Environmental Survey 2014-2017 (GerES V)

Gerda Schwedler et al.

Summary: The study analyzed benzene and acrylamide metabolites in urine samples from children and adolescents in Germany. Results showed lower levels of benzene metabolite and higher levels of acrylamide metabolites compared to other countries. Smoking, second-hand smoke exposure, and dietary habits were found to be associated with metabolite levels, emphasizing the importance of reducing exposure through personal choices and policy measures. Sharing these results with the European HBM Initiative will contribute to a better understanding of exposure to carcinogens and support exposure assessment efforts.

Does the food processing contaminant acrylamide cause developmental neurotoxicity? A review and identification of knowledge gaps

Summary: Studies indicate that acrylamide (AA) exposure during gestation may have adverse effects on fetal growth and is associated with reduced head circumference in newborns. The impact of AA on the developing brain in humans has not yet been studied, highlighting the urgent need for further research on this topic.
